NAS - 2 or 4 bay - Marvell or Atom ?

Looking to buy a NAS, initially as a home for music files and eventually for films and possibly photos. Clearly lots of options around - and after reading numerous reviews and comments here (and other locations) being swayed towards a QNAP device [plan to run minimserver on it for music].

Two main questions;
Should I buy a four bay unit, with only two discs (*) which gives room for expansion later - any issues with cooling etc ?
Does the TS-x21 range have the CPU to support four DS type devices streaming independently and (later) two or three TV's streaming films (assuming all at the same time as a worst case), or would I need something using an Atom processor ?

(*) Initially thinking about 2Tb WD RED mirrored for resilience - how easy would that be to migrate to 4 x 3TB raid-5 - would I need an external copy or is there a way to use QNAP utilities to move the existing data ? I'm thinking break the mirror, install 3 x 3Tb, configure Raid-5 over three discs, copy the data from 2Tb disc, replace 2Tb with 3Tb and add 3Tb into the Raid-5 set - does the last step actually add more storage to the raid-5 set without trashing the data ?
